Maida Peda
  • Preparation time: 15 minutes
  • Cooking time: 5 minutes
  • Makes: 1 portion

Ingredients

  • 10g ghee (clarified butter)
  • 35g wheat flour (maida)
  • 10ml milk
  • 10g sugar
  • 1 tsp cardamon
  • 2 strands saffron

Method

  1. Put ghee and refined flour in a broad non-stick pan, mix well and cook on a medium flame till light brown for 3 to 4 minutes, while stirring continuously. Add milk to bind the mixture together.

  2. Transfer the mixture into a large plate, cool for at least 10 minutes.

  3. Add the sugar and cardamom powder and mix gently with your hands. The mixture should bind like a dough.

  4. Rest for 10 minutes.

  5. Divide the mixture into 2 portions.

  6. Roll each portion into a ball and then flatten it slightly in between your palms. Form a depression in the centre, put one strand of saffron (dipped in milk) on top of peda for better presentation.
