Filo Fish Pie

Filo Fish Pie

Ingredients

  • 300g frozen fish pie mix (Salmon and prawn mix - defrosted)
  • 400ml rice milk
  • 50g butter (melted)
  • 1 tbsp flour
  • 135g (½ pack) filo pastry

Method

  1. Preheat the oven to 160°C/320°F/Gas mark 3

  2. In a large pan, place the frozen fish mixture and cover with the rice milk, allow to simmer until the fish is just cooked.

  3. Remove the fish and place into a bowl, pour the milk into a jug and set aside.

  4. Place ½ the melted butter into a pan and add the flour, allow to cook until combined.

  5. Gradually add the milk to the pan, ensuring to whisk away any lumps, continue adding until the mixture is a thick
    sauce and can coat the back of a spoon.

  6. Add the fish mixture back to the sauce and pour into a circular oven dish.

  7. Scrunch the filo pastry into balls and place on top of the fish mixture, ensuring to coat the filo with the remaining
    butter.

  8. Bake for 20 minutes or until golden brown.

  9. Remove from the oven, serve and enjoy!
