Egg Muffins

Egg Muffins

Ingredients

  • 1 tsp oil
  • 75g broccoli, finely chopped
  • 75g red pepper, finely chopped
  • 1 tsp paprika
  • 1 tsp black pepper
  • 4 eggs
  • 2 bottles Renastep™
  • 50g feta, crumbled

Method

  1. Heat 1 tsp oil in a pan and fry broccoli and peppers with paprika and black pepper until soft.

  2. Whisk eggs and Renastep in a bowl until fully combined.

  3. Pour egg mixture evenly between each muffin cup.

  4. Evenly distribute the cooked vegetables and crumbled feta between each muffin.

  5. Bake for 15 minutes or until cooked through and serve.
