Chicken chow mein

Chicken chow mein

Ingredients

  • 400g noodles
  • 1 tbsp sesame oil
  • 250g chicken breast*, strips
  • 100g mangetout
  • 100g red pepper, sliced
  • 10g ginger
  • 2 cloves garlic
  • 2 tsp reduced salt light soy sauce
  • 2 tsp reduced salt dark soy sauce
  • 1 tsp rice wine
  • 1 tsp white pepper
  • ½ tsp sugar
  • 1 spring onion, finely chopped

Method

  1. Add the noodles to a pan of boiling water and cook for 5 minutes or until al dente. Drain and set aside.

  2. Heat sesame oil in a frying pan or wok until very hot, add in the chicken strips and cook for 3-4 minutes or until golden brown and fully cooked.

  3. Add in the mangetout and red pepper and stir fry until slightly soft.

  4. Add in the ginger and garlic and stir fry for 30 seconds.

  5. Add in the noodles, dark and light reduced salt soy sauce, rice wine, white pepper, and sugar and stir fry until all ingredients are coated.

  6. Remove from the heat and top with spring onions and serve immediately.
