Cheese Muffins

Cheese Muffins

Ingredients

  • 50ml olive oil
  • 2 bottles Renastep™
  • 1 large egg
  • 200g plain flour
  • 75g cheddar, grated

Method

  1. Preheat the oven to 180°C/356°F/Gas mark 4

  2. Mix the olive oil and Renastep in a jug and set aside.

  3. Whisk the egg well until pale and fluffy.

  4. Place the flour in a bowl and mix in the olive oil and Renastep mixture, once fully combined gently fold in the egg
    mixture.

  5. Fold in the grated cheddar and set aside.

  6. Divide equally between 6 muffin cases and bake for 25 minutes or until golden brown and fully cooked.

  7. Leave to cool, serve and enjoy!
