Heat water in a pan. When it’s boiling, add rice and cook for 10 minutes and set aside
Add the tofu, cornflour, and ground coriander to a bowl. Stir until the tofu is well coated with cornflour.
Heat a small amount of oil in a frying pan and add the coated tofu. Cook until golden brown all over and set aside.
Heat oil in a frying pan and add garlic, harissa, black beans, and ½ the lime juice. Allow to fry until hot and then set aside.
For the pico de gallo add red pepper, onion and coriander to a small bowl. Stir well and set aside.
In a blender, add the peas, lime juice, and olive oil and blend until combined but still retaining some texture
Serve rice into a bowl and top with the tofu, black beans, pico de gallo, pea guacamole and coconut yoghurt. Sprinkle with coriander and serve!
